Carrot and/or Apple Salad (with Nuts and/or Raisins)

carrots - peeled and grated

 

3 Tbsp

raisins - soaked if needed

 

1/2 Tbsp

mayonnaise

 

lemon juice as needed

 

1/4 tsp

salt

 

1/4 tsp

sugar

 

 

salt and pepper to taste

The ingredients are approximate, and the above makes enough for one or two people. Grated apples can be added at a rate of about one apple (washed, cored, and diced, but not peeled) per 3 or 4 carrots-sprinkle the apple pieces with a little lemon juice to keep them from getting brown. Chopped
nuts are especially nice if there are apples (a salad of diced apples, chopped nuts, and mayonaise is Waldorf salad). Yogurt can be used in place of some or all of the mayonnaise, to increase the options in this recipe
