Honey Cake

3 1/2 cups

all purpose flour

 

1 tbsp

baking powder

 

1 tsp

baking soda

 

1/2 tsp

salt

 

4 tsp

cinnamon

I use about 2

1/2 tsp

ground cloves

I use about 1 1/2

1/2 tsp

allspice (aka English pepper

 

1 cup

oil

1 cup

honey

(first measure the oil and then the honey)

3

eggs

1 cup

warm strong tea or coffee

3/4 cup

orange juice

can be changed in part with whiskey

1/2 cup

slivered almonds (optional)



This is a traditional dish for the Jewish New Year. The honey is a symbol for a sweet year.

Whisk dry ingredients in a large bowl . Make a well and pour in wet ingredients. Stir well. Pour into Bundt or angelfood cake pan, or 3 loaf pans. Bake in moderate oven for about an hour until a toothpick comes out clean.
